Die Lebensmittel- und Getränkeindustrie erzeugt eine große Menge an Abfällen in fester oder flüssiger Form, die häufig auf Deponien entsorgt werden, was mit erheblichen Behandlungskosten, der Entstehung von Abfällen (Schlamm und Sickerwasser) und dem Treibhauseffekt von Gasen verbunden ist, was sich negativ auf die Umwelt auswirkt. Bei diesen Rückständen handelt es sich um Reste aus dem Produktionsprozess von Keksen, Gebäck, Kuchen, industriellem Brot sowie um abgelaufene Produkte kurz vor dem Verfallsdatum. In diesem Zusammenhang wurde eine Forschungs- und Entwicklungsarbeit durchgeführt, die ihre Verwertung bei der Herstellung von grünem Alkohol ermöglicht.
